Valentine's Day Brandy Snap Baskets

with Barattolino Delizioso Amarena

Ingredients

1 tub of Sammontana Barattolino Delizioso Amarena (cherry flavoured ice cream)

Crunchy baskets

120 g caster sugar
20 g honey
60 g chopped almonds or hazelnuts

To decorate

Fabbri Amarena cherries in syrup
White chocolate curls or shavings

STEP 1

Make the caramel

In a heavy-bottomed saucepan, melt the sugar and honey over a low heat. Stir until you obtain a light amber caramel. Add the chopped nuts and stir quickly to coat them evenly.

STEP 2

Prepare the basket bases

Pour half of the mixture onto a sheet of baking paper, cover with a second sheet and roll out with a rolling pin to form a thin disc.

STEP 3

Shape the baskets

While the disc is still warm and pliable, place it over the inverted base of a muffin tin or small cup to create a basket shape. Repeat with the remaining mixture to make a second basket. Leave to cool and harden completely at room temperature for about 15 minutes, until crisp.

STEP 4

Add the ice cream and decorate

Shortly before serving, remove the Delizioso Amarena tub from the freezer. Place a generous scoop of ice cream inside each crunchy basket. Garnish with Amarena cherries in syrup and a generous sprinkling of white chocolate shavings.
